This is the recipe for the oat slice that was in Friday's lunchbox, you can use any stronger tasting jam in it, I had raspberry at the time but blackberry also works fantastically xo

Raspberry and Oat Slice

2 cups instant oats
1 ¼ cup plain flour
½ cup sugar
½ tsp cinnamon
¼ tsp baking powder (I use the Bob Red Mill’s one available on our website)
¼ tsp salt
1 tsp pure vanilla extract or imitation vanilla
¾ cup butter (melted)
1 cup home made raspberry jam (or you could use any stronger tasting berry jam, such as Blackberry)
½ cup spinach puree


1. Pre heat oven on 180 degrees celcius. Spray a 8x8 inch baking tray.
2. In a large bowl combine oats, flour, sugar, cinnamon, baking powder, salt and vanilla. Mix well.
3. Add the melted butter and mix well but do not over mix.
4. Set aside 1/3 of the oat mix. Press remaining mix into the tray. Bake until lightly browned on the sides but not fully baked (about 10 – 15 minutes).
5. Mix the spinach and jam together in a small bowl.
6. Spread the mixture over the part baked layer of oat, and top with remaining oat mix. Bake until the topping is slightly browned (approx. 20 – 25 minutes). Allow to cool on a rack before cutting into bars.

Please allow to completely cool prior to serving so the taste of the spinach fully disappears.
